I find it way harder to eat foie gras after watching an episode of No Reservations wherein Anthony Bourdain attempted to convince his watchers that foie gras production isn’t that cruel, by showing geese being grabbed by the neck and being force-fed by a tube shoved down their throat. He then explained how geese don’t have any nerves in their esophagus and no gag reflex and so on, but that didn’t make it any easier to watch.

I still occasionally eat foie gras, though, since I still eat meat, and I find it hard to ethically differentiate between a cow taking a bullet to the brain and a goose being force-fed for two weeks before it’s killed. Both animals end up killed, but force-feeding does seem more cruel than a hopefully quick and minimally painful death. Some producers are experimenting with non-force-fed foie gras, exploiting the natural gorging cycle of premigratory geese, but apparently it’s hard to get the liver as enlarged and fatty as it is with force-feeding. Still, it seems like a positive development.

Your stomach will feel better if you eat plant enzymes before every meal. They’ll help you digest your food properly. You can find them in most health stores, I think. I bought ones called DigestMore Ultra at Essence of Life in kensington market for $26. Now I can eat heaps of mashed potatoes with tons of butter and cream for dinner, and feel fine afterwards!

Looks like a nice cozy spot… i like the hand print art. on the wall. damn that place is actually full of very presentable food. delicious. What a menu, definitely a brave chef. I’ll definitely have to check it out….
